I've just edited a post only seconds after submitting and see it's showing: "edited by" already.

IPB is not the best forum software to start with for writing messages on, even I've started writing them first on my own XenForo forum and pasting it here later now. Because when using FireFox with built-in spell checker enabled, for some reason IPB doesn't work well at all checking as you type text. So I'd think about putting a 2 minute editing time limit in place to avoid the forum keep showing edited by all over the place "unnecessary" really.

Don't get why you've got it set so low anyhow, and would also think about increasing the post editing time limit as well. That appears to be set very low around 30 minutes to 1 hour maximum. At least give about 3-6 hours minimum time for editing threads and posts. 1 hour (I'm guessing it might be set at) seems a little extreme for editing content, sometimes things do need to be updated later and that decent editing time is needed for it!

It's your forum and your choice. But don't get why you have "edited by" time set at what looks like nothing, and such a short Post and Thread editing time imposed also. IPB is seriously bad for spell checking as you type, it just doesn't work - end off, then only highlights your spelling mistakes on clicking edit button afterwards! In XenForo and vBulletin, they get picked up right away as typing the text spelt wrong out. It's a very annoying thing with IPB after a while!

There is a bug in the editor. The fix is to right click in the edit box and make sure check spelling is selected and also make sure your default language is checked.

I will up the time limit a bit.

Seems to be working fine now spell checking as you write, but the trick is you have to switch to plain editor mode first, only then can you right-click and choose a default language for spell checker before switching back to normal WYSIWYG editor mode.
